African Cajun Spinach

This recipe for African Cajun stewed spinach is inspired by recipes from Africa and the Southern US. It gets its savory seafood flavor from the combination of cajun seasoning, cayenne pepper, sausage and seafood. Dark leafy greens are also a great source of antioxidants and will balance your meal on a nutritional level. African Cajun spinach can be enjoyed as a side dish or with rice, boiled plantains, or yams as a meal.

Ingredients

40 oz (1132 g) spinach frozen or chopped, blanched and squeezed

5 large tomatoes, chopped

1 large yellow onion, chopped)

4 t garlic, minced

½ t Cayenne pepper (to taste)

1 tbs Cajun seasoning (to taste)

½ c palm oil

12 oz. spicy cajun sausage (optional)

3 cubes chicken Maggi (seasoning)

1/2 teaspoon salt

1/2 cup crayfish (roughly blended)

Instructions

  1. Pour the palm oil into a large, sturdy pan and sauté onions until translucent.
  2. Add garlic and sauté for another 5 minutes or until fragrant.
  3. Add tomatoes and cook for about 15 minutes, stirring occasionally.
  4. Add crayfish, Maggi bouillon cubes, salt and cajun sausage.
  5. If the mixture gets too dry and is at risk of burning, add water in small amounts.
  6. Add spinach and stir well.
  7. Let the spinach cook for another 5-10 minutes, stir often to prevent burning.

Serve warm with fried plantains, yams or over rice.
